How to Use a Clever Dripper
The Clever Dripper is an immersion brewer with a valve-controlled base. You steep the coffee in the chamber, then place the dripper on a mug or carafe to trigger the release — the valve opens on contact and the coffee drains through the paper filter. The result combines the body of full immersion with the clarity of paper filtration, and there's no pour technique to learn.
It works well for anyone new to filter brewing, and equally for more experienced brewers who want a consistent, low-variable cup without the precision demands of a V60 or Kalita Wave.
Basic Recipe
Coffee: 15g, medium filter grind
Water: 250g at 95°C
Total brew time: approx. 3:30
Brewing Instructions
-
Heat your water. Bring the kettle to 95°C. Place the Clever Dripper on your mug with a filter in position. Pour a little hot water through to rinse the filter and warm the mug, then discard.
-
Add coffee. Place the Clever Dripper on your scale and tare. Add 15g of medium filter grind coffee.
-
Add water and stir. Start your timer. Pour 250g of water at 95°C over the grounds and stir for 15 seconds to ensure even saturation.
- Steep. Place the lid on the dripper and leave until 2:15 on your timer.
-
Drain. At 2:15, place the Clever Dripper on your mug. The valve opens on contact and the coffee draws down through the filter, finishing around 3:00–3:30.
- Remove the dripper. At 3:30, lift the dripper away from your mug to stop the drawdown. Your coffee is ready.
Frequently Asked Questions
What size Clever Dripper should I buy?
The 300ml brews one cup at a time and suits the recipe above. The 500ml is better if you regularly brew for two or want to brew into a carafe. Both use standard flat-bottomed filter papers: size 2 for the 300ml, size 4 for the 500ml.
What grind size should I use?
Medium filter grind. This is coarser than espresso but finer than French press. If your coffee tastes sour or thin, grind slightly finer. If it tastes bitter or over-extracted, go slightly coarser. See our grind size guide for more detail.
How does the Clever Dripper compare to a V60 or French press?
A V60 brews by continuously pouring water through the grounds — technique and pour speed affect the result significantly. The Clever Dripper steeps first and then drains, which is more forgiving and easier to repeat consistently. Compared to a French press, the paper filter removes the fine particles and oils that give French press its characteristic body and sediment, producing a cleaner cup.
Can I use the Clever Dripper to make iced coffee?
Yes. Brew a more concentrated recipe over ice using the flash brew method: reduce your water volume and brew directly into a vessel containing ice. See our flash brew guide for a full recipe using the Clever Dripper.
What coffee works best in a Clever Dripper?
The Clever Dripper suits most roast levels. Light to medium roasts with distinct origin character tend to come through clearly with the clean finish of paper filtration. Medium-dark roasts also work well, producing a fuller, more rounded cup. Browse our filter coffee range for options we'd recommend.
Do I need to use Clever Dripper branded filter papers?
No. The Clever Dripper uses standard flat-bottomed filters. We stock official Clever Dripper papers, and Filtropa filters are a compatible alternative.
